La pancetta

Made with the farm’s own pork, this pancetta has an enveloping sweet, delicately salty flavour. Seasoned only slightly to enhance the quality of the meat, this pancetta is aged at length and is best eaten in spring and summer. Perfect on its own, in a sandwich with a mild cheese accompanied by pickles, or as an ingredient for sauces and frittatas.
